Easy peasy vegetable risotto

What you'll need to do

  1. Boil the rice with the stock
  2. Add the peas for the last 5 minutes
  3. Drain rice and peas but retain stock
  4. While rice is cooking heat the oil in a wok or large frying pan
  5. Place leek and courgette in the wok and fry until soft – approx 8 mins
  6. Add the rice, peas, puree and enough stock to make a moist consistency
  7. Continue to cook for 2 minutes and add more stock as necessary
  8. Serve sprinkled with cheddar cheese to taste

Preparation time: 5 - 10 minutes

Cooking time: Approx 40 minutes
