Easy peasy vegetable risotto
What ingredients
you'll need
- 200g organic rice
- 80g organic peas
- 1 tbsp organic olive oil
- 1 organic leek finely chopped
- 1 organic courgette chopped into tiny pieces
- 1 low salt organic vegetable stock cube
- Organic fruit/vegetable puree such as Ella's Kitchen 'Carrots, apples and parsnips' Stage 1 organic baby food
- Grated organic cheddar cheese to serve
Serves 2 adults, 1 toddler and a baby from 9 months

What you'll need to do
- Boil the rice with the stock
- Add the peas for the last 5 minutes
- Drain rice and peas but retain stock
- While rice is cooking heat the oil in a wok or large frying pan
- Place leek and courgette in the wok and fry until soft – approx 8 mins
- Add the rice, peas, puree and enough stock to make a moist consistency
- Continue to cook for 2 minutes and add more stock as necessary
- Serve sprinkled with cheddar cheese to taste
Preparation time: 5 - 10 minutes
Cooking time: Approx 40 minutes
