Very veggie couscous  

What ingredients
you'll need

  • 175g organic couscous
  • 350ml hot low salt organic vegetable stock
  • 50g organic peas
  • ¼ organic red onion chopped into tiny pieces
  • 2 large organic tomatoes
  • ¼ organic orange pepper chopped into tiny pieces
  • 30g frozen or tinned organic sweetcorn
  • Organic fruit/vegetable puree such as Ella’s Kitchen 'Butternut squash, carrots, apples + prunes' Stage 1 organic baby food - warmed

Serves 2 adults, a toddler and a baby from 9 months

What you'll need to do

  1. Poor stock over couscous and leave to stand until completely absorbed, usually about 10 minutes
  2. Meanwhile boil the peas for 5 minutes and add sweet corn for last minute
  3. Fluff up couscous with a fork
  4. Warm through the puree
  5. Mix all veg into couscous
  6. Add enough warmed puree to make a moist consistency and serve

Preparation time: 10 - 15 minutes

Cooking time: approx 20 - 25 minutes
