Very veggie couscous
What ingredients
you'll need
- 175g organic couscous
- 350ml hot low salt organic vegetable stock
- 50g organic peas
- ¼ organic red onion chopped into tiny pieces
- 2 large organic tomatoes
- ¼ organic orange pepper chopped into tiny pieces
- 30g frozen or tinned organic sweetcorn
- Organic fruit/vegetable puree such as Ella’s Kitchen 'Butternut squash, carrots, apples + prunes' Stage 1 organic baby food - warmed
Serves 2 adults, a toddler and a baby from 9 months

What you'll need to do
- Poor stock over couscous and leave to stand until completely absorbed, usually about 10 minutes
- Meanwhile boil the peas for 5 minutes and add sweet corn for last minute
- Fluff up couscous with a fork
- Warm through the puree
- Mix all veg into couscous
- Add enough warmed puree to make a moist consistency and serve
Preparation time: 10 - 15 minutes
Cooking time: approx 20 - 25 minutes
