Helpful stuff

It was a tricky decision to make, but we wanted to make our products as safe as possible for little tummies so we have to ensure that the acidity of the products is just right - this is so we don't have to heat our scrummy organic food to a higher temperature than is absolutely necessary so keeping in all the organic nutrients and scrummy flavours.  

We found that, because we only use natural organic products that vary with the seasons, some of our organic fruit and veg were not as acidic as they should have been.  Lemon juice is naturally acidic, and most bugs don’t survive in acidic environments.  We therefore sometimes add a dash to doubly ensure that our foods are always safe when the natural acidity of a recipe is less than we’d like.  We always check the natural acidity levels, as they could vary because of things like the season of the harvest or the source of the fruits and vegetables. The lemon juice comes from organic lemons.
