Ingredients

Method

  • 2 x Ella's Kitchen Strawberries, Rhubarb + Apples pouches
  • 2 eggs
  • 100g melted butter (vegetable oil for DF)
  • 160g wholemeal flour
  • 1.5 teaspoon baking powder
  • Handful of blueberries, halved
  • For the topping:
  • 2.5 x strawberries
  • 15 x blueberries
  • Some thick Greek yoghurt or DF alternative

Ingredients

Method

  1. Mix the Strawberries, Rhubarb + Apples pouches, eggs, + butter/oil together in a bowl with whisk until smooth
  2. Add the flour + baking powder slowly, being careful not to form any lumps
  3. Mix until the batter is smooth
  4. Sprinkle blueberries into the mix
  5. Divide into mini muffin cases
  6. Bake at 180 degrees Celsius for 15 mins
  7. Once cooled top with Greek yoghurt
  8. Cut a strawberry into quarters, lengthways for the bunny ears
  9. Take your blueberries + cut in half for the eyes on nose
  10. Serve + enjoy immediately!
