  • 100g chicken breast, chopped
  • 100g coconut milk
  • 8g mild curry powder
  • 1 x white onion
  • 50g cauliflower
  • 3 x cubes Ella's Kitchen Squash veggie boosts

Method

  1. Steam cauliflower in a little water until soft
  2. In a seperate pan, add a little oil + the white onion
  3. When the onion is soft, add the curry powder + diced chicken. Keep stirring until the chicken breast is fully cooked
  4. Add the coconut milk to the chicken + onion, when hot, stir in the veggie boosts + the steamed cauliflower
  5. Cook until the sauce is hot
  6. Serve with rice
