  • 75g short grain rice uncooked
  • 40g cream cheese
  • 50g peas
  • 50g red pepper
  • 50g onion
  • 2 x Ella's kitchen Sweet potato, squash, carrots + parsnips veggie boost cubes

Method

  1. Cook long grain rice in boiling water according to pack instructions.
  2. Meanwhile, heat some oil over a medium heat + add chopped red pepper + onion. Cook until the pepper starts to soften + the onion becomes translucent.
  3. Drain the rice + add back into the pan- add the two sweet potato, squash, carrots + parsnip veggie boost cubes, peas + cooked veg.
  4. Cook until the mixture is hot + the veggie cubes have melted through before stirring in the cream cheese.

Fun For Little Ones

Super shaker! Pop some uncooked rice in a clean plastic bottle + secure the lid. While you’re rustling up this tasty dish, give the shaker to your baby to make some music for you to cook along to. Don’t forget to dance! Lentils, crisped rice, + water are good shaker-fillers, too.
