nuts-for-you sweet potato stew

Your litle one will have nut'in but love for this sweet potato stew.
Made with warming spices + tasty veg, it's a hug in a bowl!

Ingredients


- 2 teaspoons olive oil
- 1 onion, finely chopped
- 60g / 21/4oz white cabbage, finely shredded
- 1 large garlic clove, crushed
- 2 tablespoons tomato puree
- 1 teaspoon smoked paprika
- 2 small sweet potatoes, peeled and cut into 1cm.1/2 inch pieces
- 2 teaspoons no-salt, no-sugar peanut butter
- 60ml whole milk or milk of choice, plus extra if needed
- Squeeze of lime juice (optional)
- Flatbread, cut into fingers and steamed green beg, to serve
Method


- Heat the oil in a saucepan over a medium heat, add the onion and cook, stirring occasionally, for 7 minutes or until softened. Stir in the cabbage and garlic and cook for another 3 minutes, turning down the heat if the vegetables start to brown
- Stir in the tomato puree and paprika, followed by the sweet potatoes. Add 300ml of water, stir then bring to the boil. When the sauce starts to bubble, turn the heat down and simmer, part-covered with a lid, for 15 minutes or until the sweet potatoes are tender
- Add the peanut butter and milk, stir and warm through briefly. Finish with a squeeze of lime (if using) Spoon into bowls and coarsely mash with the back of a fork for babies, adding more milk if needed to ensure the texture is soft and moist. Serve with fingers of flatbread and steamed green veg.
