Ingredients


- 550g butternut squash, peeled, deseeded and cut into large bite-sized pieces
- 1 1/2 tablespoons olive oil
- 1 onion, finely chopped
- 150g mushrooms, roughly chopped
- 40g dried split red lentils, rinsed
- 400ml passata (sieved tomatoes)
- 400ml vegetable stock
- 2 tablespoons tomato puree
- 400g red kidney beans in water, drained and rinsed
- 5 cloves
- 1 teaspoon ground ginger
- 1 teaspoon mild chilli powder
- 1 teaspoon dried oregano
- Cooked brown rice, steamed green veg, grated cheese and natural yogurt, to serve
Method


- Preheat the oven to 180C/350F/Gas Mark 4. Toss the squash in half the oil, then spread it out in a roasting tray and roast in the oven for 25-30 minutes, turning once, until tender and slightly golden
- Meanwhile, heat the remaining oil in a large saucepan over a medium heat, add the onion and mushrooms, cover the pan with a lid and cook, stirring frequently, for 6 minutes or until softened
- Stir in the garlic and lentils, then add the passata, stock, tomato puree, beans, cloves, ginger, chilli powder and oregano and bring almost to the boil. Reduce the heat, part-cover with a lid and simmer, stirring occasionally for 25 minutes or until reduced and thickened
- When the squash is cooked, stir in the chilli. Finely chop the chilli for babies, then serve with cooked rice and steamed green veg and topped with grated cheese and a spoonful of yogurt.
just for fun, scoop the seeds!
Use an ice-cream scoop to remove the seeds from the squash-it's so quick and easy! And don't forget to save the washed and dried seeds to use in a shaker for your baby
